Description

Instant Pot Lazy Lasagna is a comforting, cheesy, and satisfying dinner that comes together in under 40 minutes. This one-pot recipe layers broken lasagna noodles, savory ground beef, rich tomato sauce, and creamy cheeses all cooked quickly and effortlessly in the Instant Pot, delivering classic lasagna flavors with minimal prep and cleanup—perfect for busy weeknights and family meals.

Ingredients

Scale

Meat & Protein

  • 1 lb ground beef

Pasta

  • 8 oz broken lasagna noodles (no-boil or regular broken into pieces)

Tomato Base

  • 1 cup tomato sauce
  • 1 cup diced tomatoes

Dairy & Cheese

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Aromatics & Seasonings

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Liquids

  • 1 cup beef broth or water
  • 1 tbsp olive oil (for sautéing)

Instructions

  1. Sauté the Aromatics and Beef: Set your Instant Pot to sauté mode. Heat olive oil and cook finely chopped onion and garlic until fragrant and translucent. Add ground beef, breaking it up with a spoon, and cook until browned, forming the savory base of the sauce.
  2. Add Tomato Sauce and Seasoning: Pour in tomato sauce and diced tomatoes. Stir in Italian seasoning, salt, and pepper. Let the mixture simmer for a few minutes on sauté mode to blend the flavors and create a rich sauce.
  3. Layer the Ingredients: Break lasagna noodles into smaller pieces suitable for the Instant Pot. Sprinkle half of the broken noodles evenly over the sauce. Dollop half of the ricotta cheese on top. Repeat layering with the remaining noodles, ricotta, mozzarella, and Parmesan cheeses for creamy, cheesy layers.
  4. Add Broth and Cook Under Pressure: Pour beef broth or water over the layered ingredients, ensuring noodles are covered to cook evenly. Seal the Instant Pot lid, set to high pressure, and cook for 10 minutes to achieve tender noodles and fully melted cheese.
  5. Natural Release and Serve: When cooking completes, allow the pressure to release naturally for 5-10 minutes, then carefully release any remaining pressure manually. Gently stir the lasagna, let it cool slightly, and serve warm.

Notes

  • Use quick-cooking or no-boil lasagna noodles to reduce cooking time.
  • Distribute cheeses evenly to avoid clumps and ensure gooey texture.
  • Do not skip adding broth or water to properly cook the noodles under pressure.
  • Natural pressure release helps keep layers intact and prevents splattering.
  • Customize the sauce by adding red wine, fresh basil, or red pepper flakes for extra flavor.
