Description

This hearty and comforting Irish Bacon, Cabbage, and Potato Soup brings together smoky bacon, tender cabbage, and creamy potatoes in a savory broth. It’s the perfect dish for chilly evenings or when you’re craving a satisfying bowl of warmth. Garnished with crispy bacon and fresh parsley, it’s a classic Irish dish that’s easy to make and full of flavor.

Ingredients

Scale
  • 4 slices of bacon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups cabbage, shredded
  • 2 large potatoes, peeled and diced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.
  • Add the chopped onion and minced garlic to the pot and sauté until translucent, about 3-4 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Add the shredded cabbage and diced potatoes to the pot. Cook until the vegetables are tender, about 20 minutes.
  • Season with salt and pepper to taste.
  • Serve the soup hot, garnished with the crispy bacon and a sprinkle of fresh parsley.

Notes

  • For extra flavor, you can use smoked bacon or add a dash of hot sauce for a little kick.
  • This soup can be stored in the refrigerator for up to 3 days and makes great leftovers.
  • To make it a bit heartier, try adding some cream or milk toward the end of cooking for a creamier texture.
