Description

Delight in this tropical cheesecake featuring creamy layers of pineapple and cream cheese, all atop a buttery graham cracker crust, topped with fluffy whipped cream.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 24 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup pineapple juice
  • 1 cup whipped cream
  • 3 large eggs

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix the graham cracker crumbs and melted butter, then press into the bottom of a springform pan to create the crust.
  • In a separate bowl, beat the cream cheese, sugar, crushed pineapple, and pineapple juice until smooth. Add the eggs one at a time, mixing well after each addition.
  • Pour the cheesecake mixture over the prepared crust and bake in the preheated oven for 50-60 minutes, or until set.
  • Once cooled, top with whipped cream and refrigerate for at least 4 hours before serving.

Notes

For extra tropical flair, garnish with additional crushed pineapple or toasted coconut.
