Ingredients

  • 4 Italian sausages (sweet or hot, depending on your preference)
  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2 red bell peppers, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional, for added heat)
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped (for garnish, optional)

Instructions

  • Cook the Sausages:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through (about 12-15 minutes). Remove from the skillet and set aside.
  • Sauté the Vegetables:
    • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced onions and bell peppers. Cook, stirring occasionally, until the vegetables are tender and slightly caramelized (about 8-10 minutes).
  • Add the Garlic and Seasonings:
    • Add the minced garlic to the skillet and cook for 1 minute, until fragrant. Pour in the chicken broth and add the dried oregano, dried basil, and red pepper flakes (if using). Stir to combine and let the mixture simmer for 2-3 minutes.
  • Combine and Serve:
    • Slice the cooked sausages into bite-sized pieces and return them to the skillet. Stir to combine with the vegetables and heat through. Season with salt and pepper to taste. Garnish with fresh basil or parsley if desired.
  • Serve:
    • Serve hot with crusty bread, over pasta, or in a sub roll for a hearty sausage sandwich!

Notes

For a spicier version, use hot Italian sausage and increase the amount of red pepper flakes. You can also add other vegetables like mushrooms or zucchini for more variety.
