Ingredients
Scale
- 1/2 cup (1 stick) unsalted butter, very cold and cubed
- 1 3/4 cups all-purpose flour, plus more for dusting
- 1 1/2 teaspoons baking powder
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoons garlic powder
- 2 tablespoons fresh jalapeño peppers, finely chopped
- 1 cup cheddar cheese, shredded
- 1/2 cup cold buttermilk, plus 1 tablespoon for brushing
- 6 jalapeño slices (optional, for topping)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, sugar, salt, and garlic powder.
- Cut the cold, cubed butter into the dry ingredients using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Add the chopped jalapeños and shredded cheddar cheese to the mixture, and stir to combine.
- Pour in the cold buttermilk and gently mix until just combined. Be careful not to overwork the dough.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a 1-inch thick rectangle.
- Using a biscuit cutter or a glass, cut out biscuits from the dough. Place them on a baking sheet lined with parchment paper.
- Brush the tops of the biscuits with the remaining 1 tablespoon of buttermilk.
- Optional: Top each biscuit with a jalapeño slice for extra flavor.
- Bake for 12-15 minutes, or until the biscuits are golden brown and cooked through.
- Serve warm.
Notes
- For extra cheese flavor, you can mix in a bit more cheddar cheese into the dough or sprinkle some on top before baking.
- You can adjust the spice level by adding more or less jalapeño depending on your preference.
