Description
Crispy on the outside and tender on the inside, these Jalapeno Popper Corn Fritters are packed with fresh corn, spicy jalapeños, and gooey cheddar cheese. Served with a spicy sriracha ranch dipping sauce, they make for a perfect appetizer or snack that everyone will love!
Ingredients
For the Sriracha Ranch Dipping Sauce:

1 cup (232g) mayonnaise

¼ cup (61g) whole milk

2 tablespoons dry ranch seasoning mix

1 tablespoon sriracha
For the Fritters:

2 cans (15.25 ounces each) corn kernels, drained (about 3 cups kernels)

1 cup (125g) all-purpose flour

2 teaspoons baking powder

1 teaspoon kosher salt
-
¼ teaspoon black pepper
-
1 tablespoon garlic, minced

2 large eggs, room temperature
-
½ cup (122.5g) whole milk, room temperature

⅓ cup (33g) chopped green onions

2 medium jalapeño peppers, seeded and diced

¼ cup (28g) mild cheddar cheese, finely shredded

Vegetable oil, for frying
Instructions

Make the Sriracha Ranch Dipping Sauce: In a small bowl, whisk together mayonnaise, whole milk, dry ranch seasoning mix, and sriracha. Adjust the sriracha to your preferred spice level. Refrigerate until ready to serve.

Prepare the fritter batter: In a large bowl, combine flour, baking powder, salt, pepper, and minced garlic. Stir in the corn kernels, chopped green onions, diced jalapeños, and shredded cheddar cheese.

In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the dry ingredients and corn mixture. Stir until just combined, being careful not to overmix.

Fry the fritters: Heat vegetable oil in a large skillet or deep fryer over medium-high heat. You’ll want enough oil to shallow fry the fritters, about 1–2 inches deep.

Once the oil is hot (about 350°F or 175°C), drop spoonfuls of the fritter batter into the oil, flattening them slightly with the back of a spoon. Fry for 2–3 minutes per side or until golden brown and crispy.

Transfer the fritters to a paper towel-lined plate to drain any excess oil.
- Serve: Serve the fritters warm with the chilled sriracha ranch dipping sauce on the side.
Notes

For a spicier kick, leave some of the seeds in the jalapeños or add extra sriracha to the dipping sauce.

These fritters can also be baked at 375°F (190°C) for 15-20 minutes if you prefer a lighter option.
