Description

Crispy on the outside and tender on the inside, these Jalapeno Popper Corn Fritters are packed with fresh corn, spicy jalapeños, and gooey cheddar cheese. Served with a spicy sriracha ranch dipping sauce, they make for a perfect appetizer or snack that everyone will love!

For the Sriracha Ranch Dipping Sauce:

  • 1 cup (232g) mayonnaise

  • ¼ cup (61g) whole milk

  • 2 tablespoons dry ranch seasoning mix

  • 1 tablespoon sriracha

For the Fritters:

  • 2 cans (15.25 ounces each) corn kernels, drained (about 3 cups kernels)

  • 1 cup (125g) all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 1 tablespoon garlic, minced

  • 2 large eggs, room temperature

  • ½ cup (122.5g) whole milk, room temperature

  • ⅓ cup (33g) chopped green onions

  • 2 medium jalapeño peppers, seeded and diced

  • ¼ cup (28g) mild cheddar cheese, finely shredded

  • Vegetable oil, for frying


Instructions

  • Make the Sriracha Ranch Dipping Sauce: In a small bowl, whisk together mayonnaise, whole milk, dry ranch seasoning mix, and sriracha. Adjust the sriracha to your preferred spice level. Refrigerate until ready to serve.

  • Prepare the fritter batter: In a large bowl, combine flour, baking powder, salt, pepper, and minced garlic. Stir in the corn kernels, chopped green onions, diced jalapeños, and shredded cheddar cheese.

  • In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the dry ingredients and corn mixture. Stir until just combined, being careful not to overmix.

  • Fry the fritters: Heat vegetable oil in a large skillet or deep fryer over medium-high heat. You’ll want enough oil to shallow fry the fritters, about 1–2 inches deep.

  • Once the oil is hot (about 350°F or 175°C), drop spoonfuls of the fritter batter into the oil, flattening them slightly with the back of a spoon. Fry for 2–3 minutes per side or until golden brown and crispy.

  • Transfer the fritters to a paper towel-lined plate to drain any excess oil.

  • Serve: Serve the fritters warm with the chilled sriracha ranch dipping sauce on the side.

Notes

  • For a spicier kick, leave some of the seeds in the jalapeños or add extra sriracha to the dipping sauce.

  • These fritters can also be baked at 375°F (190°C) for 15-20 minutes if you prefer a lighter option.

  • Store leftover fritters in an airtight container in the fridge for up to 2 days. Reheat in the oven or air fryer for best results.
