For the Sandwich:

  • 6 strips bacon

  • 4 slices sourdough bread

  • 1 to 2 tablespoons butter

Instructions

  • Cook the bacon: In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble into small pieces.

  • Prepare the cheese mixture: In a bowl, mix together the garlic and herb cream cheese, grated Cheddar, Monterey Jack, chopped jalapeños, cumin (if using), and crumbled bacon until fully combined.

  • Assemble the sandwiches: Spread butter on one side of each slice of sourdough bread. On the unbuttered side of two slices, spread an even layer of the cheese and bacon mixture.

  • Grill the sandwiches: Place the slices with the cheese mixture together to form a sandwich. Heat a skillet or griddle over medium heat. Place the sandwiches in the skillet, buttered side down.
