These Keto Beef Stroganoff Meatballs are a low-carb twist on the classic beef stroganoff, featuring flavorful meatballs simmered in a creamy, tangy sauce. Perfect for a satisfying and hearty meal that fits into a ketogenic diet.


Ingredients

  • 1 lb ground beef
  • 1/2 cup almond flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup sour cream (for meatballs)
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup beef broth
  • 1/2 cup sour cream (for sauce)
  • 1 tbsp dijon mustard
  • 1 tbsp Worcestershire sauce
  • Chopped parsley for garnish

Instructions

  • In a large bowl, combine the ground beef, almond flour, parmesan cheese, 1/4 cup sour cream, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
  • In a skillet, heat olive oil over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides.
  • Remove the meatballs from the skillet and set them aside.
  • In the same skillet, add beef broth, 1/2 cup sour cream, dijon mustard, and Worcestershire sauce. Stir until well combined and bring the mixture to a simmer.
  • Return the meatballs to the skillet and simmer for 10-15 minutes, allowing the meatballs to cook through and absorb the flavors of the sauce.
  • Serve the meatballs topped with the creamy sauce and garnish with chopped parsley.

Notes

  • You can serve this dish over cauliflower rice or zucchini noodles to keep it low-carb.
  • Adjust the seasoning to taste by adding more salt, pepper, or mustard if desired.
  • For an extra creamy sauce, increase the amount of sour cream.
