- 1 lb ground beef
- 1/2 cup almond flour
- 1/4 cup grated parmesan cheese
- 1/4 cup sour cream (for meatballs)
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/2 cup beef broth
- 1/2 cup sour cream (for sauce)
- 1 tbsp dijon mustard
- 1 tbsp Worcestershire sauce
- Chopped parsley for garnish
Instructions
- In a large bowl, combine the ground beef, almond flour, parmesan cheese, 1/4 cup sour cream, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
- In a skillet, heat olive oil over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides.
- Remove the meatballs from the skillet and set them aside.
- In the same skillet, add beef broth, 1/2 cup sour cream, dijon mustard, and Worcestershire sauce. Stir until well combined and bring the mixture to a simmer.
- Return the meatballs to the skillet and simmer for 10-15 minutes, allowing the meatballs to cook through and absorb the flavors of the sauce.
- Serve the meatballs topped with the creamy sauce and garnish with chopped parsley.

- You can serve this dish over cauliflower rice or zucchini noodles to keep it low-carb.
- Adjust the seasoning to taste by adding more salt, pepper, or mustard if desired.
