Refreshing and delicious, this Key Lime Parfait with Coconut features creamy key lime filling layered over a crunchy graham cracker base, topped with toasted coconut for a delightful twist on a classic dessert!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup key lime juice
  • 1/2 cup whipped cream
  • 1/4 cup shredded coconut, toasted

Instructions

  • In a mixing bowl, combine the graham cracker crumbs with the melted butter. Divide the mixture evenly between serving glasses or cups, pressing it down to form a base.
  • In another bowl, beat the softened cream cheese, sugar, and key lime juice together until smooth. Gently fold in the whipped cream until fully incorporated.
  • Spoon the key lime mixture over the graham cracker base in each glass, creating a layered effect. Top with the toasted shredded coconut.
  • Chill the parfaits in the refrigerator for at least 1 hour before serving.
