  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 1/4 cup lime juice
  • 1 tsp lime zest

Instructions

  • Preheat oven to 325°F (165°C). Grease and flour a 10-inch tube pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition.
  • Combine the flour and baking soda; gradually add to the creamed mixture alternately with the buttermilk.
  • Stir in the lime juice and lime zest.
  • Pour batter into the prepared pan.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
