Ingredients

  • Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup unsalted butter, melted
  • Filling:
    • 16 ounces cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream, chilled
    • 3 kiwis, peeled and diced
    • 1/4 cup kiwi puree (optional, for extra flavor and color)
  • Garnish:
    • Fresh kiwi slices

Instructions

  • In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
  • In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy.
  • In another bowl, whip the chilled heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.
  • Fold in diced kiwis and kiwi puree (if using) into the cream cheese mixture until evenly distributed.
  • Pour the filling over the prepared crust, spreading it out evenly with a spatula.
  • Cover and refrigerate for at least 4 hours, or until set.
  • Before serving, garnish with fresh kiwi slices.
