- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- Filling:
- 16 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, chilled
- 3 kiwis, peeled and diced
- 1/4 cup kiwi puree (optional, for extra flavor and color)
- Garnish:
- Fresh kiwi slices
Instructions
- In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan. Chill in the refrigerator while preparing the filling.
- In a large bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until creamy.
- In another bowl, whip the chilled heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth.
- Fold in diced kiwis and kiwi puree (if using) into the cream cheese mixture until evenly distributed.
- Pour the filling over the prepared crust, spreading it out evenly with a spatula.
- Cover and refrigerate for at least 4 hours, or until set.
- Before serving, garnish with fresh kiwi slices.
