Description

These Korean Glazed Chicken Drumsticks are a deliciously sticky and savory dish with a sweet and tangy glaze made from soy sauce, rice vinegar, and brown sugar. Infused with garlic, ginger, and a touch of heat from red pepper flakes, these drumsticks are an irresistible, finger-licking treat perfect for dinner or a special occasion.

Ingredients

Scale
  • 1 tablespoon sesame oil

  • 1 tablespoon cornstarch

  • 1/2 cup soy sauce

  • 1/2 cup rice vinegar

  • 3/4 cup brown sugar

  • 6 cloves garlic, minced

  • 1 teaspoon ground ginger

  • 1 teaspoon sesame seeds

  • 1/2 teaspoon crushed red pepper flakes

  • 8 chicken drumsticks

  • 2 tablespoons sliced green onions (for garnish)

  • 1 teaspoon sesame seeds (for garnish)

Instructions

  • Prepare the glaze: In a small saucepan, heat sesame oil over medium heat. Add minced garlic and cook for about 1 minute, until fragrant. Stir in ground ginger, soy sauce, rice vinegar, brown sugar, and crushed red pepper flakes. Bring the mixture to a simmer and cook for about 5-7 minutes, allowing the sauce to thicken slightly.

  • Thicken the sauce: In a small bowl, mix cornstarch with a tablespoon of water to create a slurry. Slowly add the slurry to the simmering sauce, stirring continuously until it thickens to a glaze consistency.

  • Prepare the drumsticks: Preheat the oven to 400°F (200°C). Place the chicken drumsticks on a baking sheet lined with parchment paper or aluminum foil. Season with a little salt and pepper.

  • Coat the drumsticks: Brush or spoon the prepared glaze over the chicken drumsticks, making sure they are evenly coated.

  • Bake: Bake the drumsticks in the preheated oven for 30-35 minutes, basting with additional glaze every 10 minutes, until the chicken is fully cooked and golden brown. The internal temperature should reach 165°F (74°C).

  • Garnish and serve: Remove the drumsticks from the oven and sprinkle with sesame seeds and sliced green onions for garnish. Serve hot.

Notes

  • For extra flavor, marinate the chicken in the glaze for 1-2 hours before cooking.

  • You can also cook the drumsticks on the grill instead of baking them for a smoky flavor.

  • If you prefer a milder dish, reduce the crushed red pepper flakes or omit them altogether.
