Description

This delightful layered pumpkin dessert features a creamy filling atop a buttery graham cracker crust, making it the perfect treat for fall gatherings or holiday celebrations.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (such as Cool Whip)
  • 1 can (15 oz) pumpkin puree
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 cup cold milk
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • Extra whipped topping (for layering and topping)

Instructions

  • In a bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a 9×9-inch baking dish to form the crust.
  • In a separate bowl, beat the cream cheese and powdered sugar until smooth. Fold in 1 cup of whipped topping and spread the mixture over the crust.
  • In another bowl, whisk together the pumpkin puree, vanilla pudding mix, cold milk, pumpkin pie spice, and cinnamon until well blended.
  • Spread the pumpkin mixture evenly over the cream cheese layer.
  • Top with extra whipped topping and refrigerate for at least 4 hours, or until set.
  • Slice and serve chilled, optionally garnished with a sprinkle of cinnamon or crushed graham crackers.

Notes

  • For an extra touch, consider adding chopped pecans or walnuts on top.
