Description

This Lemon Chicken recipe features a perfectly seasoned, crispy parmesan crust on tender chicken breasts, paired with a zesty lemon butter sauce that brings everything together. The dish is both flavorful and elegant, perfect for a weeknight dinner or a special occasion. Garnished with fresh parsley and lemon slices, it’s as beautiful as it is delicious.

Ingredients

Scale
  • For the Parmesan Crusted Chicken:

    • 1 1/2 lb chicken breasts (2 large, patted dry with paper towels)

    • 1 Tbsp olive oil (for sautéing)

    • 1 Tbsp parsley (to garnish, optional)

    • 1/2 lemon (sliced for garnish, optional)

  • For the Egg Mixture:

    • 2 large eggs

    • 1 garlic clove (minced)

    • 1/2 tsp Italian seasoning

    • 1/2 tsp salt

    • 1/4 tsp ground black pepper

  • For the Parmesan Breading Mixture:

    • 1 cup Parmesan cheese (grated)

    • 3 Tbsp all-purpose flour

  • For the Lemon Butter Sauce:

    • 8 Tbsp unsalted butter

    • 2 garlic cloves (minced)

    • 1/4 cup lemon juice (freshly squeezed)

    • 1/4 cup chicken broth

    • 1/4 tsp ground black pepper

Instructions

  • Prepare the Chicken:
Pat the chicken breasts dry with paper towels. This helps the breading adhere better during cooking.

  • Prepare the Egg Mixture:
In a shallow bowl, beat the eggs and add the minced garlic, Italian seasoning, salt, and pepper. Mix well.

  • Prepare the Parmesan Breading Mixture:
In another shallow bowl, combine the grated Parmesan cheese and flour. Stir to combine.

  • Coat the Chicken:
Dip each chicken breast first into the egg mixture, making sure it’s fully coated. Then dredge the chicken in the Parmesan breading mixture, pressing gently to ensure an even coating.

  • Cook the Chicken:
Heat olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken breasts to the skillet. Cook for 4-5 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove the chicken from the skillet and set aside.

  • Make the Lemon Butter Sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the lemon juice, chicken broth, and black pepper, and stir to combine. Let the sauce simmer for 3-4 minutes to allow the flavors to meld together.

  • Serve:
Place the cooked chicken on serving plates and spoon the lemon butter sauce over the top. Garnish with fresh parsley and lemon slices, if desired.

Notes

  • For extra flavor, consider adding a pinch of red pepper flakes to the lemon butter sauce for a little heat.

  • Serve with a side of vegetables or over a bed of rice or pasta to complete the meal.

  • This dish pairs wonderfully with a light salad or steamed asparagus.
