Description

Tender, golden potatoes infused with vibrant lemon juice, fragrant oregano, and garlic, roasted to crispy perfection. This classic Greek side dish is both refreshing and savory—ideal for pairing with grilled meats or enjoyed on its own as a flavorful comfort food.

  • 1.2 kg (2.5 lb) potatoes (Desiree, Yukon Gold, or Maris Piper varieties recommended)

  • 1½ cups low sodium chicken stock or broth

  • ½ cup olive oil

  • ⅓ cup fresh lemon juice

  • 5 garlic cloves, finely grated

  • 1 tablespoon dried oregano

  • 2 teaspoons salt

  • Optional garnish: lemon wedges, fresh oregano leaves


Instructions

  • Preheat oven to 400°F (200°C).

  • Peel potatoes and cut into wedges or large chunks.

  • In a large roasting pan, combine chicken stock, olive oil, lemon juice, garlic, oregano, and salt. Stir well.

  • Add potatoes to the pan and toss to coat evenly in the lemon and herb mixture.

  • Roast uncovered for about 45–60 minutes, turning occasionally, until potatoes are golden, tender inside, and crisp on the edges.

  • Remove from oven and garnish with fresh oregano leaves and lemon wedges if desired. Serve warm.

  • Use waxy potatoes like Yukon Gold or Desiree for best texture.

  • Low sodium broth helps control saltiness; adjust salt to taste.
