Bright, buttery cookies infused with fresh lemon flavor and rolled in powdered sugar for a delightful finish. Perfect for any occasion!


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1/2 cup powdered sugar

Instructions

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, then stir in the vanilla and lemon extracts.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until well combined.
  • Fold in the lemon zest and juice.
  • Roll the dough into 1-inch balls, then roll in powdered sugar to coat.
  • Place on the prepared baking sheets and flatten slightly with the bottom of a glass.
  • Bake for 10-12 minutes, or until edges are set but centers are still soft.
  • Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra lemony flavor, add more lemon zest.
  • Store in an airtight container for up to a week.
