- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- Zest of 1 lemon
- Juice of 1 lemon
- 1/2 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla and lemon extracts.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients until well combined.
- Fold in the lemon zest and juice.
- Roll the dough into 1-inch balls, then roll in powdered sugar to coat.
- Place on the prepared baking sheets and flatten slightly with the bottom of a glass.
- Bake for 10-12 minutes, or until edges are set but centers are still soft.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For an extra lemony flavor, add more lemon zest.
