Description

These delightful Lemon Sugar Cookies are light, chewy, and bursting with fresh lemon flavor. Rolled in powdered sugar for an extra touch of sweetness, they are perfect for any occasion!


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • Zest of 2 lemons
  • 2 tbsp fresh lemon juice
  • 1/4 cup powdered sugar for rolling

Instructions

  • Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  • In a large bowl, using an electric mixer, beat the butter and granulated sugar until light and fluffy, about 3 minutes.
  • Add the egg, egg yolk, vanilla extract, lemon zest, and lemon juice to the butter mixture. Beat until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  • Roll the dough into 1-inch balls and then roll each ball in powdered sugar. Place the dough balls onto the prepared baking sheets about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still look soft and slightly undercooked.
  • Cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra zing, you can add more lemon juice or zest.
  • These cookies can be stored in an airtight container for up to a week.
