A creamy, cheesy, and comforting casserole that’s loaded with sharp cheddar, crispy bacon, and green onions. Perfect as a side dish or a low-carb alternative to mashed potatoes, this loaded cauliflower casserole is a savory delight.

- 1 large head of cauliflower, cleaned and trimmed
- 1 cup chicken stock
- 3 cloves garlic, minced
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1 1/2 cups sharp cheddar cheese, shredded
- 6 slices bacon, cooked crisp and crumbled
- 2 green onions, thinly sliced
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a casserole dish.
- Cut the cauliflower into florets and steam them with the chicken stock and minced garlic until tender (about 10-15 minutes).
- Once the cauliflower is tender, drain any excess liquid, and transfer the florets to a large mixing bowl. Mash the cauliflower using a potato masher or food processor until smooth.
- Stir in the sour cream, cream cheese, and 1 cup of shredded sharp cheddar cheese until the mixture is smooth and well-combined. Season with sea salt and black pepper to taste.
- Transfer the mashed cauliflower mixture to the greased casserole dish. Top with the remaining 1/2 cup of shredded cheddar cheese and crumbled bacon.
- Bake in the preheated oven for about 20-25 minutes or until the top is golden and bubbly.
- Garnish with sliced green onions before serving.
Notes
- For a lighter version, you can substitute the cream cheese with Greek yogurt and use turkey bacon instead of regular bacon.
- This casserole can be made ahead of time and stored in the refrigerator. Just reheat before serving.
