Loaded Potato Meatloaf Casserole

Description

Hearty and deliciously savory, this casserole combines classic meatloaf with loaded potatoes for a comforting meal the whole family will love!


Ingredients

For the Meatloaf:

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Loaded Potatoes:

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • Salt and pepper to taste

For the Topping:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  • In a large bowl, mix together ground beef, ground pork, bread crumbs, Parmesan cheese, milk, egg, onion, garlic, oregano, basil, salt, and pepper until well combined.
  • Press the meat mixture into the bottom of the prepared baking dish to form an even layer.
  • In a large pot, bring water to a boil and cook the diced potatoes until tender, about 10-12 minutes. Drain well.
  • Mash the potatoes in a bowl and mix in sour cream, heavy cream, shredded cheddar cheese, crumbled bacon, and green onions. Season with salt and pepper to taste.
  • Spread the loaded potatoes evenly over the meatloaf layer in the baking dish.
  • Sprinkle the top with additional shredded cheddar cheese.
  • Bake for 30-35 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Garnish with chopped parsley if desired. Serve hot and enjoy!

Feel free to add extra toppings like additional bacon or chopped vegetables. This casserole is perfect for family dinners or gatherings!
