For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream

Instructions

  • Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, 1/3 cup granulated sugar, and melted butter. Press this mixture evenly into the bottom of the prepared springform pan.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Add 1/2 cup granulated sugar and vanilla extract, mixing until well combined.
  • Add the eggs one at a time, beating well after each addition. Stir in the sour cream until the mixture is smooth.
  • Pour the cream cheese mixture over the crust in the springform pan, spreading it evenly.
  • Bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  • Remove from the oven and let cool completely at room temperature.
  • Refrigerate for at least 4 hours or overnight until fully chilled and set.
