Description

This vibrant cheesecake combines the refreshing flavors of lemon and lime with the richness of cream cheese. Topped with sweet cherries and crunchy pistachios, it creates the perfect balance of creamy, tangy, and nutty flavors.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Zest of 1 lime
  • 1/2 cup chopped pistachios
  • 1/2 cup chopped cherries

Instructions

  • Preheat oven to 350°F.
  • In a bowl, combine graham cracker crumbs, 1/2 cup sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a separate bowl, beat the cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, and lime zest.
  • Pour the cream cheese mixture over the prepared crust. Sprinkle the chopped pistachios and cherries evenly on top.
  • Bake for 45-50 minutes or until the center is almost set (slightly jiggly). Allow the cheesecake to cool completely.
  • Refrigerate for at least 3 hours, or overnight, for best results before serving.

Notes

  • Garnish with extra pistachios or cherries for an added touch before serving.
  • The cheesecake can also be topped with a light glaze made from cherry syrup or a citrus glaze for extra flavor.
