For the Cake Layers:
- 2 cups cake flour
- 2 teaspoons baking powder

- 1 cup buttermilk
- 1/4 cup dragon fruit puree
- 1 teaspoon vanilla extract

For the Dragon Fruit Buttercream:
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup dragon fruit puree
- 1 teaspoon vanilla extract
- Pink food coloring (optional)
For Decoration:
- Fresh dragon fruit slices
- Edible flowers (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together cake flour, baking powder, baking soda, and salt.
- In a large bowl, beat softened butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Add dry ingredients to the butter mixture alternately with buttermilk and dragon fruit puree, beginning and ending with dry ingredients. Mix until just combined. Add pink food coloring if desired.
- Divide batter evenly among prepared pans. Smooth tops with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans and cool completely on wire racks.
- For the dragon fruit buttercream, beat softened butter until creamy. Gradually add powdered sugar, dragon fruit puree, vanilla extract, and pink food coloring (if using). Beat until light and fluffy.
- To assemble the cake, place one cake layer on a serving plate. Spread a layer of dragon fruit buttercream on top. Repeat with the second and third cake layers.
- Frost the top and sides of the cake with the remaining dragon fruit buttercream.
- Decorate with fresh dragon fruit slices and edible flowers if desired.
Notes
For added flavor, consider using fresh dragon fruit puree instead of store-bought.
