Description

This easy Meatball Stroganoff recipe combines tender, juicy meatballs with a creamy, savory mushroom sauce enriched with sour cream. Ready in under 30 minutes, it’s a perfect comforting weeknight dinner that can be served over noodles, rice, or mashed potatoes for a hearty, satisfying meal.

Ingredients

Scale

Meatball Ingredients

  • 1 lb ground beef (lean or regular)
  • 1/2 cup bread crumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg
  • Salt and pepper, to taste

Sauce Ingredients

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 medium onion, chopped
  • 8 oz mushrooms, sliced
  • 2 tbsp all-purpose flour (or gluten-free flour alternative)
  • 2 cups beef broth (or vegetable broth for vegetarian option)
  • 1/2 cup sour cream
  • Fresh parsley, chopped (for garnish)
  • Additional salt and pepper, to taste

Instructions

  1. Prepare the Meatballs: In a mixing bowl, combine ground beef, bread crumbs, finely chopped onion, minced garlic, egg, salt, and pepper. Mix gently until just combined to keep the meatballs tender and juicy. Shape the mixture into small, even-sized meatballs for uniform cooking.
  2. Brown the Meatballs: Heat a skillet with olive oil over medium heat. Add the meatballs and cook until browned on all sides but not fully cooked through, about 5-6 minutes. Remove meatballs and set aside to allow caramelization and lock in flavor.
  3. Sauté Onions and Mushrooms: In the same skillet, add butter and sauté chopped onions until soft and translucent. Add sliced mushrooms and cook until they release moisture and turn golden brown, enhancing the sauce’s earthiness.
  4. Make the Sauce: Sprinkle flour over the onion and mushroom mixture and stir well to cook out the raw flour taste. Gradually whisk in beef broth, stirring continuously until the sauce thickens. Lower heat and stir in sour cream until smooth and creamy, adding salt and pepper to taste.
  5. Finish Cooking Meatballs in Sauce: Return the browned meatballs to the sauce, nestle them in, cover, and simmer gently for about 10 minutes. This allows the meatballs to cook through and soak up the stroganoff flavors.
  6. Garnish and Serve: Sprinkle freshly chopped parsley over the dish for color and fresh flavor. Serve hot over egg noodles, rice, or mashed potatoes for a comforting meal.

Notes

  • Don’t overmix the meatball mixture to keep meatballs tender and avoid dense texture.
  • Properly brown the meatballs to develop deeper flavor and appealing texture.
  • Simmer gently on low heat to meld flavors and maintain juicy meatballs.
  • Add sour cream off the heat and stir gently to prevent curdling and ensure a smooth sauce.
  • Use fresh herbs like parsley to brighten the dish and balance richness.
