Ingredients
Scale

Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the base: In a small ovenproof skillet or baking dish, toss together feta cheese, cherry tomatoes, spinach, garlic, olive oil, oregano, red pepper flakes, salt, and pepper.
- Bake the base: Bake for 10 minutes, or until the tomatoes soften and the feta begins to melt.
- Add the eggs: Remove the dish from the oven and carefully crack the eggs over the feta mixture.
- Finish baking: Return to the oven and bake for another 8-12 minutes, or until the egg whites are set but the yolks remain runny.
- Serve: Garnish with fresh parsley or basil. Serve warm with crusty bread for dipping.
Notes
- If you prefer your eggs more cooked, you can bake them a little longer until the yolks are firm.
- You can substitute spinach with kale or arugula for a different twist.
- This dish can be enjoyed as a main or side and pairs well with a light salad.
