  • 6 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh spinach, chopped
  • 1 clove garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 4 large eggs
  • Fresh parsley or basil for garnish
  • Crusty bread for serving

Instructions

  • Preheat the oven: Preheat your oven to 375°F (190°C).
  • Prepare the base: In a small ovenproof skillet or baking dish, toss together feta cheese, cherry tomatoes, spinach, garlic, olive oil, oregano, red pepper flakes, salt, and pepper.
  • Bake the base: Bake for 10 minutes, or until the tomatoes soften and the feta begins to melt.
  • Add the eggs: Remove the dish from the oven and carefully crack the eggs over the feta mixture.
  • Finish baking: Return to the oven and bake for another 8-12 minutes, or until the egg whites are set but the yolks remain runny.
  • Serve: Garnish with fresh parsley or basil. Serve warm with crusty bread for dipping.

Notes

  • If you prefer your eggs more cooked, you can bake them a little longer until the yolks are firm.
  • You can substitute spinach with kale or arugula for a different twist.
