Description

What’s your favorite way to enjoy a warm, gooey cheese dip—drizzled over nachos, scooped with tortilla chips, or as a topping for your favorite tacos? This creamy Mexican Cheese Dip is perfect for any occasion and easy to make!

Ingredients

Scale
  • 2 cups white American cheese, shredded or cubed
  • 1/2 cup milk (more as needed)
  • 1 tablespoon butter
  • 1/4 cup canned green chilies, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder (optional, for a bit of heat)
  • Salt, to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  • Melt the Cheese:
    • In a medium saucepan, melt the butter over medium heat. Add the milk and slowly stir in the white American cheese. Stir constantly until the cheese is fully melted and smooth.
  • Add the Flavors:
    • Mix in the chopped green chilies, garlic powder, onion powder, cumin, and chili powder (if using). Continue to stir until all ingredients are well combined and the dip is smooth.
  • Adjust the Consistency:
    • If the dip is too thick, gradually add more milk until you reach your desired consistency.
  • Serve:
    • Transfer the cheese dip to a serving bowl, garnish with fresh cilantro if desired, and serve warm with tortilla chips, nachos, or as a topping for your favorite Mexican dishes!

Notes

This cheese dip can be kept warm in a slow cooker on the low setting, making it perfect for parties or game day. For extra flavor, try adding a splash of hot sauce or a sprinkle of smoked paprika.
