- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled Cotija cheese
- 1 cup cooked corn kernels (fresh or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
- Salt and pepper to taste
Instructions
- Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.
- Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or baking sheet.
- Spread a thin layer of mayonnaise over the pizza dough. Sprinkle with shredded mozzarella cheese and crumbled Cotija cheese.
- Scatter the cooked corn kernels evenly over the cheese.
- In a small bowl, mix the sour cream with minced garlic, chili powder, smoked paprika, and ground cumin. Spoon small dollops of this mixture over the pizza.
- Season with salt and pepper to taste.
- Bake in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove from the oven and sprinkle with chopped fresh cilantro. Serve with lime wedges on the side for squeezing over the pizza.
