A hearty, cheesy casserole that combines the flavors of taco night in a single dish. Ground beef, beans, corn, and tomatoes are layered with sour cream, cheddar cheese, and crushed tortilla chips, creating a comforting and delicious meal that’s perfect for any night of the week.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 packet taco seasoning
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef and diced onion over medium heat until the beef is browned and no longer pink. Drain excess fat.
  • Stir in taco seasoning, corn, black beans, and diced tomatoes. Simmer for 5 minutes to heat through and combine flavors.
  • In a 9×13 inch baking dish, spread a layer of the beef mixture on the bottom. Top with a layer of sour cream and then sprinkle with shredded cheddar cheese.
  • Repeat the layers once more.
  • Top the casserole with crushed tortilla chips for added crunch.
  • Bake in the preheated oven for 30 minutes, or until hot and bubbly.
  • Serve immediately and enjoy!

Notes

  • For extra heat, add a chopped jalapeño or a sprinkle of chili powder to the beef mixture.
  • You can swap the sour cream for Greek yogurt for a lighter version.
  • This casserole is great with a side of salsa or guacamole!
