- 1 pound ground beef
- 1 onion, diced
- 1 packet taco seasoning
- 1 can corn, drained
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes with green chilies
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup crushed tortilla chips
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, cook ground beef and diced onion over medium heat until the beef is browned and no longer pink. Drain excess fat.
- Stir in taco seasoning, corn, black beans, and diced tomatoes. Simmer for 5 minutes to heat through and combine flavors.
- In a 9×13 inch baking dish, spread a layer of the beef mixture on the bottom. Top with a layer of sour cream and then sprinkle with shredded cheddar cheese.
- Repeat the layers once more.
- Top the casserole with crushed tortilla chips for added crunch.
- Bake in the preheated oven for 30 minutes, or until hot and bubbly.
- Serve immediately and enjoy!
Notes
- For extra heat, add a chopped jalapeño or a sprinkle of chili powder to the beef mixture.
- You can swap the sour cream for Greek yogurt for a lighter version.
