A fun, cheesy casserole that’s packed with all the flavors of taco night. Ground beef, chili beans, shredded cheddar cheese, and crunchy corn chips come together for an easy and hearty meal, topped with sour cream and salsa for extra flavor.


Ingredients

  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 1 (16 ounce) can chili beans
  • 2 cups shredded Cheddar cheese
  • 1 (16 ounce) package corn chips
  • 1 (8 ounce) container sour cream
  • 1 (16 ounce) jar salsa

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain off excess fat.
  • Stir in the taco seasoning mix and chili beans. Simmer for a few minutes to combine the flavors.
  • In a 9×13-inch baking dish, layer the following: start with a layer of corn chips, then add a layer of the meat mixture, followed by a generous layer of shredded cheddar cheese.
  • Bake in the preheated oven for 20 to 30 minutes, or until the casserole is hot and bubbly.
  • Top with sour cream and salsa before serving for added flavor.

Notes

  • You can add some diced onions, jalapeños, or bell peppers to the beef mixture for extra flavor and crunch.
  • This dish is great for a casual dinner, and you can easily double the recipe for a larger crowd.
  • For a spicier version, use spicy salsa or add some hot sauce to the meat mixture.
