- 1 box yellow cake mix (plus ingredients listed on the box)
- For the Filling:
- 1 package (8 oz) cream cheese, softened
- 1 can (20 oz) crushed pineapple, drained
- 1 cup powdered sugar
- 1 container (8 oz) whipped topping (Cool Whip)
- For the Topping:
- 1 can (15 oz) mandarin oranges, drained
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 ½ cups cold milk
- ½ cup shredded coconut (optional)
Instructions
- Bake the Cake:
- Prepare the yellow cake mix according to package directions in two round cake pans. Allow the cakes to cool completely on a wire rack.
- Prepare the Filling:
- In a large bowl, beat together the softened cream cheese and powdered sugar until smooth. Stir in the drained pineapple and fold in half of the whipped topping.
- Make the Pudding:
- In another bowl, whisk the vanilla pudding mix with cold milk until thickened. Fold the remaining whipped topping into the pudding mixture.
- Assemble the Cake:
- Place one layer of the cooled cake on a serving platter. Spread the cream cheese-pineapple filling evenly over the cake layer. Place the second layer on top.
- Frost the Cake:
- Frost the entire cake with the pudding-whipped topping mixture. Decorate the top with drained mandarin oranges and, if desired, sprinkle with shredded coconut.
- Chill:
- Refrigerate the cake for at least 2 hours before serving to let the flavors blend.

- For a more tropical flavor, you can add additional fruit like bananas or strawberries to the filling.
