Description

This indulgent Million Dollar Cake features layers of moist yellow cake, creamy filling with pineapple, and a light vanilla pudding topping, making it a perfect dessert for any occasion!


Ingredients

  • For the Cake:
    • 1 box yellow cake mix (plus ingredients listed on the box)
  • For the Filling:
    • 1 package (8 oz) cream cheese, softened
    • 1 can (20 oz) crushed pineapple, drained
    • 1 cup powdered sugar
    • 1 container (8 oz) whipped topping (Cool Whip)
  • For the Topping:
    • 1 can (15 oz) mandarin oranges, drained
    • 1 package (3.4 oz) instant vanilla pudding mix
    • 1 ½ cups cold milk
    • ½ cup shredded coconut (optional)

Instructions

  • Bake the Cake:
    • Prepare the yellow cake mix according to package directions in two round cake pans. Allow the cakes to cool completely on a wire rack.
  • Prepare the Filling:
    • In a large bowl, beat together the softened cream cheese and powdered sugar until smooth. Stir in the drained pineapple and fold in half of the whipped topping.
  • Make the Pudding:
    • In another bowl, whisk the vanilla pudding mix with cold milk until thickened. Fold the remaining whipped topping into the pudding mixture.
  • Assemble the Cake:
    • Place one layer of the cooled cake on a serving platter. Spread the cream cheese-pineapple filling evenly over the cake layer. Place the second layer on top.
  • Frost the Cake:
    • Frost the entire cake with the pudding-whipped topping mixture. Decorate the top with drained mandarin oranges and, if desired, sprinkle with shredded coconut.
  • Chill:
    • Refrigerate the cake for at least 2 hours before serving to let the flavors blend.

Notes

  • For a more tropical flavor, you can add additional fruit like bananas or strawberries to the filling.
  • This cake can be made a day in advance and stored in the refrigerator, allowing the flavors to meld even more.
