These delicious mini quiches are a perfect blend of creamy eggs, tender leeks, and smoky salmon, all baked into individual portions. With no crust, they are lighter and more flavorful, making them ideal for brunch or a savory snack.


Ingredients

  • 2 leeks
  • 100 g smoked salmon
  • 4 eggs
  • 200 ml crème fraîche
  • Salt and pepper, to taste
  • Chopped chives (for garnish)

Instructions

  • Preheat Oven: Preheat the oven to 180°C (350°F).
  • Prepare Leeks: Clean and slice the leeks. Brown them in a pan with a little olive oil until tender.
  • Prepare Salmon: Cut the smoked salmon into small pieces.
  • Make Egg Mixture: In a bowl, beat the eggs with the crème fraîche. Season with salt and pepper.
  • Combine: Add the cooked leeks and smoked salmon to the egg mixture. Mix well.
  • Fill Molds: Divide the mixture into previously greased muffin molds.
  • Bake: Bake for about 20-25 minutes, until the mini quiches are golden and firm.
  • Cool: Let cool slightly before unmolding.
  • Serve: Sprinkle with chopped chives before serving.

Notes

  • You can substitute crème fraîche with heavy cream for a lighter option.
  • If you prefer, you can add other herbs like dill or parsley for extra flavor.
