- 2 leeks
- 100 g smoked salmon
- 4 eggs
- 200 ml crème fraîche

Instructions
- Preheat Oven: Preheat the oven to 180°C (350°F).
- Prepare Leeks: Clean and slice the leeks. Brown them in a pan with a little olive oil until tender.
- Prepare Salmon: Cut the smoked salmon into small pieces.
- Make Egg Mixture: In a bowl, beat the eggs with the crème fraîche. Season with salt and pepper.
- Combine: Add the cooked leeks and smoked salmon to the egg mixture. Mix well.
- Fill Molds: Divide the mixture into previously greased muffin molds.
- Bake: Bake for about 20-25 minutes, until the mini quiches are golden and firm.
- Cool: Let cool slightly before unmolding.
- Serve: Sprinkle with chopped chives before serving.
