Ingredients

  • 4 packs of ramen noodles
  • 4 cups chicken broth
  • 1/4 cup miso paste
  • 2 chicken breasts, pounded thin
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup flour
  • Oil for frying
  • Green onions, chopped
  • Nori sheets, torn into pieces

Instructions

  • Cook ramen noodles according to package instructions, then drain and set aside.
  • In a large pot, bring chicken broth to a simmer. Whisk in miso paste until fully dissolved.
  • In a separate bowl, coat chicken breasts in flour, dip in beaten eggs, then coat with panko breadcrumbs.
  • Heat oil in a pan and fry chicken until golden brown and cooked through. Slice into strips.
  • Divide cooked noodles into bowls, pour miso broth over them, and top with chicken katsu, green onions, and nori pieces.
  • Serve hot and enjoy!

Notes

  • You can adjust the amount of miso paste based on your preference for saltiness and depth of flavor.
  • For a healthier version, you can bake the chicken instead of frying it.
