This refreshing Mojito Fruit Salad is a burst of tropical flavors with a mojito-inspired twist! The sweet and tangy honey-lime dressing, complemented by fresh mint and a variety of colorful fruits, makes this salad a perfect side dish or light dessert for warm weather gatherings.


Ingredients

  • 1/4 cup fresh lime juice
  • 2 tablespoons honey
  • 2 tablespoons chopped fresh mint
  • 1/4 teaspoon salt
  • 2 cups diced fresh pineapple
  • 2 cups halved strawberries
  • 1 cup blueberries
  • 1 cup diced kiwi
  • 1/2 cup fresh mint leaves, torn

Instructions

  • In a small bowl, whisk together the lime juice, honey, chopped mint, and salt until the honey is dissolved and the mixture is well combined.
  • In a large bowl, combine the diced pineapple, halved strawberries, blueberries, diced kiwi, and torn fresh mint leaves.
  • Pour the lime juice mixture over the fruit and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • You can add other fruits like mango or watermelon for additional flavor and variety.
  • If you prefer a sweeter salad, add a bit more honey to taste.
