- 1 1/2 cups semi-sweet chocolate chips
- 1 cup crushed chocolate sandwich cookies (like Oreos)
- 1/4 cup blue food coloring
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the butter (or coconut oil), brown sugar, and white sugar until smooth and fluffy.
- Beat in the vanilla extract and eggs (or flax eggs) until well blended.
- Gradually mix in the dry ingredients until just combined, being careful not to overmix.
- Stir in the semi-sweet chocolate chips, crushed chocolate sandwich cookies, and blue food coloring.
- Drop the dough by rounded tablespoonfuls onto ungreased cookie sheets, spacing them about 2 inches apart.
- Bake for 10 to 12 minutes, or until the edges are light brown.
- Cool on wire racks.
Notes
- You can use any type of sandwich cookies (Oreos or similar) for the crushed cookies.
- Adjust the amount of blue food coloring to your desired intensity.
- If you prefer a more cake-like cookie, reduce the baking time slightly or use a bit more butter.
