Description

This indulgent no-bake cheesecake parfait is layered with a buttery graham cracker crust, a smooth and creamy cheesecake filling, and topped with sweet cherry pie filling. A perfect, easy dessert for any occasion!

For the crust:

  • 2 cups (1416 sheets, 168 g) honey graham crackers, finely crushed

  • 1 tablespoon granulated sugar

  • ½ cup (1 stick / 113 g) unsalted butter, melted

For the cheesecake filling:

  • 2 packages (8 ounces each) cream cheese, room temperature

  • ¾ cup (150 g) granulated sugar

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon vanilla extract

  • ⅛ teaspoon kosher salt

  • 1½ cups (357 g) heavy cream, room temperature

For the topping:

  • 12-ounce can cherry pie filling


Instructions

  • Make the crust: In a bowl, combine the crushed graham crackers and granulated sugar. Pour in the melted butter and stir until the mixture is evenly coated.

  • Divide the graham cracker mixture between serving glasses or jars, pressing it down to form a crust at the bottom. Set aside to firm up.

  • Make the cheesecake filling: Using a hand mixer or stand mixer, beat the cream cheese and granulated sugar together in a large bowl until smooth and creamy.

  • Add the lemon juice, vanilla extract, and kosher salt. Continue mixing until everything is well combined.

  • In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until fully incorporated.

  • Spoon or pipe the cheesecake filling over the graham cracker crust in each glass. Smooth the top with a spatula.

  • Assemble the parfaits: Top each cheesecake parfait with a generous spoonful of cherry pie filling.

  • Refrigerate the parfaits for at least 2 hours to set the filling before serving.

  • Serve and enjoy!

  • These parfaits can be made a day ahead and stored in the refrigerator until ready to serve.
