Description
This indulgent no-bake cheesecake parfait is layered with a buttery graham cracker crust, a smooth and creamy cheesecake filling, and topped with sweet cherry pie filling. A perfect, easy dessert for any occasion!
Ingredients
For the crust:

2 cups (14–16 sheets, 168 g) honey graham crackers, finely crushed

½ cup (1 stick / 113 g) unsalted butter, melted
For the cheesecake filling:

2 packages (8 ounces each) cream cheese, room temperature

¾ cup (150 g) granulated sugar

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

⅛ teaspoon kosher salt

1½ cups (357 g) heavy cream, room temperature
For the topping:

12-ounce can cherry pie filling
Instructions

Make the crust: In a bowl, combine the crushed graham crackers and granulated sugar. Pour in the melted butter and stir until the mixture is evenly coated.

Divide the graham cracker mixture between serving glasses or jars, pressing it down to form a crust at the bottom. Set aside to firm up.

Make the cheesecake filling: Using a hand mixer or stand mixer, beat the cream cheese and granulated sugar together in a large bowl until smooth and creamy.

Add the lemon juice, vanilla extract, and kosher salt. Continue mixing until everything is well combined.

In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until fully incorporated.

Spoon or pipe the cheesecake filling over the graham cracker crust in each glass. Smooth the top with a spatula.

Assemble the parfaits: Top each cheesecake parfait with a generous spoonful of cherry pie filling.

Refrigerate the parfaits for at least 2 hours to set the filling before serving.
