  • 1 1/2 cups crushed chocolate graham crackers
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon peppermint extract
  • 1/2 cup mini chocolate chips
  • 8 oz whipped topping (like Cool Whip)

Instructions

  • In a medium bowl, mix the crushed chocolate graham crackers with the melted butter until well combined. Press the mixture firmly into the bottom of a springform pan to form the crust.
  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the peppermint extract and mix until well incorporated.
  • Gently fold in the whipped topping and mini chocolate chips until evenly distributed.
  • Spread the cheesecake mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
  • Refrigerate the cheesecake for at least 4 hours, or until set. For best results, refrigerate overnight.
