Description

This classic old-fashioned banana pudding recipe is a family favorite that never goes out of style. Layers of creamy vanilla pudding, sweet bananas, and crunchy vanilla wafers are topped with a light and golden meringue. Ingredients

  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups milk
  • 4 large eggs, separated
  • 1/2 teaspoon vanilla extract
  • 1 box vanilla wafers
  • 5 ripe bananas, sliced

Instructions

  • In a medium saucepan, combine sugar, flour, and salt. Gradually stir in the milk.
  • Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Continue to boil and stir for 1 minute.
  • Remove from heat. Quickly stir in the egg yolks and mix until smooth.
  • Return to heat and boil and stir for another minute.
  • Remove from heat again and stir in the vanilla extract.
  • In a dish, layer vanilla wafers, sliced bananas, and the pudding mixture.
  • Repeat the layers, ending with a layer of pudding on top.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Spread the meringue over the pudding, sealing the edges to prevent shrinking.
  • Bake at 350°F (175°C) for 12-15 minutes or until the meringue is golden brown.

Notes

  • Make sure the egg whites are beaten to stiff peaks to ensure a fluffy and smooth meringue topping.
  • You can refrigerate the banana pudding after baking to serve chilled, which enhances the flavors.
  • For a firmer pudding, allow it to cool and set for a couple of hours before serving.
