- 3/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups milk
- 4 large eggs, separated
- 1/2 teaspoon vanilla extract
- 1 box vanilla wafers
- 5 ripe bananas, sliced
Instructions
- In a medium saucepan, combine sugar, flour, and salt. Gradually stir in the milk.
- Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Continue to boil and stir for 1 minute.
- Remove from heat. Quickly stir in the egg yolks and mix until smooth.
- Return to heat and boil and stir for another minute.
- Remove from heat again and stir in the vanilla extract.
- In a dish, layer vanilla wafers, sliced bananas, and the pudding mixture.
- Repeat the layers, ending with a layer of pudding on top.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Spread the meringue over the pudding, sealing the edges to prevent shrinking.
- Bake at 350°F (175°C) for 12-15 minutes or until the meringue is golden brown.
Notes
- Make sure the egg whites are beaten to stiff peaks to ensure a fluffy and smooth meringue topping.
- You can refrigerate the banana pudding after baking to serve chilled, which enhances the flavors.
- For a firmer pudding, allow it to cool and set for a couple of hours before serving.
