This classic Po’ Boy Sandwich is a Southern favorite, packed with crispy fried shrimp, a tangy sauce, and fresh veggies, all tucked inside a soft French baguette. It’s perfect for a quick and satisfying meal that brings a taste of New Orleans to your table.


Ingredients

  • 1 loaf French bread
  • 1 lb shrimp, peeled and deveined
  • 1 cup flour
  • 1 cup cornmeal
  • 2 eggs
  • 1 cup mayonnaise
  • 1 tbsp hot sauce
  • 1 tbsp lemon juice
  • Lettuce, tomato, pickles, for serving

Instructions

  • Prepare the Bread: Cut the French bread into sandwich-sized pieces and slice them open.
  • Prepare the Coating: In a bowl, mix together the flour and cornmeal.
  • Beat the Eggs: In another bowl, beat the eggs.
  • Coat the Shrimp: Dip the shrimp into the beaten eggs, then coat them with the flour-cornmeal mixture.
  • Fry the Shrimp: Heat oil in a frying pan over medium-high heat. Fry the shrimp in hot oil for 2-3 minutes on each side, or until golden brown and crispy.
  • Make the Sauce: In a small bowl, mix together the mayonnaise, hot sauce, and lemon juice to create the sauce.
  • Assemble the Sandwich: Spread the sauce on the inside of the French bread.
  • Fill the Sandwich: Layer the fried shrimp, lettuce, tomato, and pickles inside the bread.
  • Serve: Serve immediately and enjoy!

Notes

  • You can also add a few dashes of Cajun seasoning to the flour and cornmeal mixture for a spicier kick.
  • If you prefer a healthier version, you can bake the shrimp instead of frying them.
  • For added flavor, consider adding a few slices of avocado to the sandwich.
