Description

A nostalgic and hearty spaghetti dish combining ground beef, bell peppers, onions, tomatoes, and elbow macaroni. It’s a flavorful, easy-to-make meal with a touch of spice, perfect for a family dinner.


Ingredients

  • 2 lb ground chuck
  • 1 large bell pepper, diced
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 1 tablespoon dried basil (fresh if you have it)
  • 1 can diced tomatoes (14.5 oz)
  • 1 can tomato sauce (15 oz)
  • 8 oz tomato puree
  • 1 can shoepeg corn (11 oz)
  • 8 oz elbow macaroni
  • 2 teaspoons Slap Yo Mama seasoning (or Lawry’s or a similar seasoning)

Instructions

  • In a large skillet, cook the diced bell pepper, onion, and ground beef over medium heat. Add Slap Yo Mama seasoning to taste. Drain the excess fat from the beef mixture.
  • Cook the elbow macaroni according to the package instructions. Drain and rinse with cold water.
  • In a large pot, combine the diced tomatoes, tomato sauce, tomato puree, and shoepeg corn. Heat over medium heat until it begins to boil.
  • Once the mixture is boiling, add the ground beef mixture to the pot and let it simmer for 10 minutes.
  • Add the cooked elbow macaroni to the pot and simmer for an additional 5 minutes to let the flavors meld together.
  • Serve and enjoy! For extra flavor, top with Parmesan cheese if desired.

Notes

  • You can use fresh basil for an added flavor boost.
  • Add more Slap Yo Mama seasoning or another hot seasoning for extra heat.
  • This dish can also be served with garlic bread or a side salad for a complete meal.
