- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup long-grain white rice
- 1 packet taco seasoning mix
- 1 cup beef broth
- 1 cup corn kernels
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute until fragrant.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
- Stir in the diced bell pepper and cook for 2-3 minutes until slightly softened.
- Add the rice, taco seasoning mix, beef broth, and corn kernels to the skillet. Stir to combine all ingredients.
- Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.
