This One-Pan Taco Rice Dinner is a savory, easy-to-make dish that brings all the bold flavors of tacos into a comforting, hearty meal. Ground beef, diced vegetables, and rice are seasoned with taco spices and cooked together in one pan for a convenient and delicious dinner option. Perfect for busy nights or meal prep!


Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup long-grain white rice
  • 1 packet taco seasoning mix
  • 1 cup beef broth
  • 1 cup corn kernels

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  • Add the minced garlic and cook for another 1 minute until fragrant.
  • Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  • Stir in the diced bell pepper and cook for 2-3 minutes until slightly softened.
  • Add the rice, taco seasoning mix, beef broth, and corn kernels to the skillet. Stir to combine all ingredients.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork before serving.

Notes

For added flavor, you can top with shredded cheese, fresh cilantro, or a squeeze of lime juice. This dish can be customized with your favorite taco toppings or vegetables.
