Ingredients

  • 1 small onion, diced
  • 2 cups beef broth
  • 1 cup milk
  • 8 oz pasta (e.g., rotini or penne)
  • 1 packet ranch seasoning mix (1 oz)
  • 2 cups shredded cheddar cheese
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and ground beef. Cook until the beef is browned and the onion is softened, about 5-7 minutes.
  • Stir in the ranch seasoning mix, then add the beef broth and milk. Bring the mixture to a simmer.
  • Add the pasta to the pot and stir to combine. Cover the pot and cook for about 10-12 minutes, or until the pasta is tender and most of the liquid is absorbed, stirring occasionally.
  • Once the pasta is cooked, stir in the shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
