Ingredients
Scale
Protein
- 2 boneless, skinless chicken breasts, seasoned with salt and pepper
Pasta & Liquids
- 8 ounces fettuccine or pasta of choice
- 2 cups chicken broth
- 1 cup heavy cream
Flavorings & Dairy
- 3 garlic cloves, minced
- 1 cup freshly grated Parmesan cheese
- 3 tablespoons butter
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (optional for garnish)
Instructions
- Sear the Chicken: Season chicken breasts with salt and pepper. Heat butter in a large pot over medium heat. Add chicken and cook for 4-5 minutes per side until golden and fully cooked. Remove chicken and set aside.
- Sauté the Garlic: In the same pot, add more butter if needed. Add minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add Liquid and Pasta: Pour in chicken broth and heavy cream; stir to combine. Bring to a gentle boil. Add pasta in a single layer. Stir occasionally to prevent sticking. Cook uncovered according to package directions until pasta is al dente.
- Finish the Sauce: Turn off heat when pasta is cooked. Stir in grated Parmesan cheese until smooth. Return chicken to pot and let warm in the sauce for a couple of minutes to meld flavors.
- Garnish and Serve: Sprinkle freshly chopped parsley over the pasta before serving immediately while warm.
Notes
- Use freshly grated Parmesan for better melting and flavor.
- Do not overcook pasta; aim for al dente as it will soften more in the sauce.
- Allow sauce to thicken off heat before adding cheese to prevent clumping.
- Pound chicken breasts to even thickness for uniform cooking.
- Stir frequently while cooking pasta to keep sauce smooth and prevent sticking.
