This creamy, comforting One Pot Chicken Alfredo combines tender chicken breast, rich cream, and Parmesan cheese, all cooked together in one pot for an easy and satisfying meal.

- 4 tablespoons olive oil (divided)
- 1 1/2 pounds chicken breast (diced)
- 4 cloves garlic (minced)
- 1 quart low sodium chicken broth
- 2 cups heavy cream
- 1 pound penne pasta
- 4 cups freshly shredded Parmesan cheese (using a microplane)
- Salt and pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- In a large pot or skillet, heat 2 tablespoons of olive oil over medium-high heat. Add diced chicken breast and cook until browned and fully cooked through (about 6-8 minutes). Remove the chicken from the pot and set it aside.
- In the same pot, add the remaining 2 tablespoons of olive oil and sauté minced garlic until fragrant (about 1 minute).
- Pour in the chicken broth and bring it to a simmer. Add the penne pasta, ensuring it’s fully submerged. Cook the pasta for 10-12 minutes, stirring occasionally, until it is tender and the broth has been mostly absorbed.
- Stir in the heavy cream and Parmesan cheese. Cook for an additional 2-3 minutes, stirring frequently, until the sauce thickens.
- Add the cooked chicken back into the pot and mix well. Season with salt and pepper to taste.
- Garnish with freshly chopped parsley and serve hot.
Notes
- For a lighter version, you can substitute the heavy cream with half-and-half or whole milk.
- If the sauce gets too thick, you can add a bit more chicken broth or water to loosen it up.
