Description

This One Pot Chicken and Vegetables Skillet is a quick, healthy, and flavorful meal. With tender chicken, vibrant vegetables, and a spicy Cajun seasoning blend, it’s an easy, nutritious dish perfect for a weeknight dinner.


Ingredients

  • 1 lb (450g) skinless, boneless chicken breast, cut into 1-inch pieces
  • 2 zucchini, sliced
  • 2 red bell peppers, chopped
  • 1 broccoli crown, broken into florets
  • 1/2 onion, sliced
  • 1/4 teaspoon salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1/4 cup (60ml) low-sodium chicken broth
  • 1 tablespoon fresh chopped parsley (for garnish)
  • 1/2 teaspoon red chili pepper flakes (optional)

Instructions

  • Season the chicken: In a bowl, season chicken pieces with salt, pepper, 1 tablespoon olive oil, and Cajun seasoning. Toss to coat.
  • Cook the chicken: Heat a skillet over medium heat and add 1 tablespoon olive oil. Cook the seasoned chicken for 5-7 minutes until done. Transfer to a plate.
  • Cook the vegetables: In the same skillet, stir-fry onions for 2 minutes. Add broccoli, zucchini, and bell peppers. Season with Cajun seasoning and cook until tender.
  • Deglaze and combine: Add chicken broth to deglaze the skillet. Return the chicken to the skillet and mix everything together.
  • Garnish: Garnish with red chili flakes (if desired) and parsley before serving. Enjoy!

Notes

  • Feel free to swap out vegetables based on what you have available. Carrots, green beans, or mushrooms work great in this dish.
  • You can make it spicier by adding extra Cajun seasoning or chili flakes.
  • For a lower-sodium option, use homemade chicken broth or water instead of low-sodium chicken broth.
