A hearty and comforting one-pot meal combining tender chicken, marinara sauce, and pasta, all topped with melted mozzarella and Parmesan cheeses. This easy-to-make dish delivers all the classic chicken Parmesan flavors in a quick, convenient pasta form.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Italian seasoning
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 24 oz marinara sauce
  • 2 1/2 cups chicken broth
  • 8 oz penne pasta
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped (for garnish)

Instructions

  • Season the chicken pieces with salt, pepper, garlic powder, onion powder, and Italian seasoning.
  • In a large pot, heat olive oil over medium-high heat. Add the seasoned chicken pieces and cook until browned, about 5 minutes.
  • Add diced onion and minced garlic to the pot and cook for another 2 minutes.
  • Pour in the marinara sauce and chicken broth, then add the penne pasta. Stir to combine.
  • Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes, or until pasta is cooked through.
  • Stir in the mozzarella and Parmesan cheeses until melted and combined.
  • Serve hot, garnished with chopped fresh basil.

Notes

  • For a creamier texture, you can stir in a little heavy cream or cream cheese before serving.
  • You can also use other types of pasta like rotini or rigatoni if preferred.
