A flavorful, hearty, and easy-to-make one-pot meal! Tender chicken breast, savory salami, and risoni pasta simmered together in chicken broth, topped with crispy salami and Parmesan. Perfect for a weeknight dinner.

- 1 tbsp olive oil
- 100g salami, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 500g chicken breast, diced
- 1 cup risoni
- 2 cups chicken broth
- 1 cup frozen peas
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced salami and cook until crispy. Remove the salami and set aside.
- In the same pot, add the chopped onion and minced garlic. Cook until softened.
- Add the diced chicken breast and cook until browned on all sides.
- Stir in the risoni and chicken broth. Bring to a simmer and cook for about 10 minutes, stirring occasionally.
- Add the frozen peas and cook for an additional 5 minutes, or until the risoni is cooked through.
- Season with salt and pepper to taste.
- Serve the chicken risoni topped with the crispy salami and grated Parmesan cheese.
Notes
- For a richer flavor, you can use homemade chicken broth.
- If you prefer, substitute chicken breast with chicken thighs for a juicier option.
- You can also add other vegetables, like bell peppers or spinach, for more variety.
