Description

A flavorful, hearty, and easy-to-make one-pot meal! Tender chicken breast, savory salami, and risoni pasta simmered together in chicken broth, topped with crispy salami and Parmesan. Perfect for a weeknight dinner.


Ingredients

  • 1 tbsp olive oil
  • 100g salami, sliced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 500g chicken breast, diced
  • 1 cup risoni
  • 2 cups chicken broth
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  • Heat olive oil in a large pot over medium heat. Add the sliced salami and cook until crispy. Remove the salami and set aside.
  • In the same pot, add the chopped onion and minced garlic. Cook until softened.
  • Add the diced chicken breast and cook until browned on all sides.
  • Stir in the risoni and chicken broth. Bring to a simmer and cook for about 10 minutes, stirring occasionally.
  • Add the frozen peas and cook for an additional 5 minutes, or until the risoni is cooked through.
  • Season with salt and pepper to taste.
  • Serve the chicken risoni topped with the crispy salami and grated Parmesan cheese.

Notes

  • For a richer flavor, you can use homemade chicken broth.
  • If you prefer, substitute chicken breast with chicken thighs for a juicier option.
  • You can also add other vegetables, like bell peppers or spinach, for more variety.
