Description

This hearty and comforting soup combines the flavors of a cheeseburger with macaroni in a one-pot meal. With savory ground beef, tender macaroni, and melty cheddar cheese, it’s a perfect meal for cozy nights or busy weeknights.

Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 2 cups elbow macaroni
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: chopped pickles, diced onions, ketchup

Instructions

  • In a large pot, cook ground beef over medium heat until browned. Drain any excess fat.
  • Add onion and garlic to the pot and cook until softened.
  • Stir in diced tomatoes and beef broth. Bring to a simmer.
  • Add macaroni to the pot and cook until tender, about 10 minutes.
  • Stir in shredded cheddar cheese until melted and well combined.
  • Season with salt and pepper to taste.
  • Serve hot with optional toppings.

Notes

  • You can substitute the beef broth with chicken broth if preferred.
  • For extra flavor, add a dash of hot sauce or mustard to the soup.
