- 1 small onion, diced

- 2 cups elbow macaroni

Instructions
- In a large pot, cook ground beef over medium heat until browned. Drain any excess fat.
- Add onion and garlic to the pot and cook until softened.
- Stir in diced tomatoes and beef broth. Bring to a simmer.
- Add macaroni to the pot and cook until tender, about 10 minutes.
- Stir in shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste.
