Ingredients

  • 1 lb chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 cup white rice
  • 1 cup chicken broth
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 1/2 cup queso cheese
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  • In a large skillet, heat olive oil over medium-high heat.
  • Add chicken pieces and cook until browned on all sides.
  • Stir in rice, chicken broth, salsa, black beans, and corn. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed.
  • Stir in cheddar cheese and queso until melted.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro.
