- 1/2 cup queso cheese
- Salt and pepper to taste

Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Stir in rice, chicken broth, salsa, black beans, and corn. Bring to a boil.
