Description

 

A savory and comforting soup, inspired by the famous Outback Steakhouse Walkabout Onion Soup. Sweet caramelized onions blend with rich beef and chicken broths, topped with layers of toasted French bread and melted Swiss and Provolone cheeses, making this dish perfect for any occasion.


Ingredients

  • 4 large yellow onions, sliced
  • 1/2 cup butter
  • 1 teaspoon sugar
  • 2 (10.5 ounce) cans beef broth
  • 2 (10.5 ounce) cans chicken broth
  • 1 (10.5 ounce) can beef consomme
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 4 slices French bread, toasted
  • 4 slices Swiss cheese
  • 4 slices Provolone cheese

Instructions

  • In a large saucepan over medium heat, sauté onions in butter until onions are translucent.
  • Sprinkle sugar over onions and stir occasionally until onions are caramelized.
  • Add beef broth, chicken broth, consomme, pepper, and garlic powder. Bring to a boil, then reduce heat and simmer for 45 minutes.
  • Preheat oven broiler.
  • Ladle soup into oven-safe bowls. Place a slice of toasted French bread on top of each bowl of soup. Layer a slice of Swiss cheese, then a slice of Provolone cheese over the bread.
  • Place bowls on a baking sheet and broil until cheese is melted and bubbly.
  • Serve hot and enjoy!

Notes

  • You can substitute the cheeses with other varieties such as Gruyere or cheddar if you prefer.
  • Make sure to use oven-safe bowls for broiling.
