For the Secret Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon pickle relish
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
For the Patty Melts:
- 1 lb (450g) ground beef (80/20 for juiciness)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 large onion, thinly sliced
- 4 tablespoons unsalted butter
- 8 slices rye bread (or your choice of bread)
- 8 slices Swiss cheese (or American cheese)
- Optional: pickles for garnish
Instructions
- Prepare the Secret Sauce:
- In a small bowl, combine the mayonnaise, ketchup, Dijon mustard, pickle relish, garlic powder, onion powder, and smoked paprika. Mix well and set aside.
- Cook the Onions:
- Heat the vegetable oil in a large skillet over medium heat.
- Add the thinly sliced onions and cook, stirring occasionally, until caramelized, about 15-20 minutes. Remove from the skillet and set aside.
- Prepare the Beef Patties:
- Divide the ground beef into 4 equal portions and shape each portion into a patty. Season both sides with salt and pepper.
- Heat a large skillet over medium-high heat. Cook the beef patties for about 4-5 minutes per side, or until cooked to your desired doneness.
- Assemble the Patty Melts:
- Spread butter on one side of each slice of bread.
- Place 4 slices of bread, buttered side down, on a clean surface.
- Spread a thin layer of the secret sauce on each slice of bread.
- Place a slice of Swiss cheese on each piece of bread.
- Top with a beef patty, followed by a generous layer of caramelized onions.
- Place another slice of Swiss cheese on top of the onions, and then top with the remaining slices of bread, buttered side up.
- Grill the Patty Melts:
- Heat a large skillet or griddle over medium heat.
- Carefully place the assembled patty melts in the skillet and cook for about 3-4 minutes per side, or until the bread is golden brown and the cheese is melted.
- Serve:
- Remove from the skillet and let cool for a minute before slicing.
- Serve with pickles and extra secret sauce on the side if desired.
