- 1/2 cup peach puree
- 3 eggs
- 1/2 cup diced peaches (fresh or canned)
- Crumb Topping:
- 1/2 cup flour
- 1/4 cup sugar
- 1/4 cup butter, softened
Instructions
- Preheat your oven to 325°F (165°C). In a mixing bowl, combine the crushed graham crackers with the melted butter, then press the mixture firmly into the bottom of a springform pan to form the crust.
- In another bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the peach puree and mix until well combined. Incorporate the eggs one at a time, mixing until just blended.
- Gently stir in the diced peaches and pour the cheesecake batter over the prepared crust.
- In a separate bowl, mix the flour, sugar, and softened butter together to create the crumb topping. Sprinkle it evenly over the cheesecake.
- Bake in the preheated oven for 50-55 minutes, or until the center is set and the edges are lightly golden.
- Allow the cheesecake to cool, then refrigerate for at least 4 hours before serving.
